It’s not summer without making s’mores. In the summertime, I typically make desserts like homemade fudgesicles, vegan cookie dough ice cream, and healthy berry crisp. But today, we’re putting a better-for-you spin on a classic summer treat: s’mores stuffed dates.
The best part? No campfire is needed. Just air fry them for 3 minutes until they’re soft, gooey, and chocolatey.

Ingredients Needed
You only need four ingredients to make these s’mores dates. Easy peasy!

- Medjool Dates: These large, juicy dates are naturally sweet, caramel-like, and perfect for stuffing, as you’ll see in my pistachio stuffed dates and cosmic brownie stuffed dates.
- Dark Chocolate: Use vegan chocolate chips, or a piece of chocolate from your favorite dark chocolate bar.
- Vegan Marshmallows: Make sure your marshmallows are vegan. Both mini and regular-sized marshmallows work (if using regular, cut them in half).
- Graham Crackers: For that classic s’mores crunch. I use these gluten-free graham crackers.
How to Make S’mores Stuffed Dates

- Step 1: Slice each medjool date lengthwise, careful not to cut all the way through. Remove the pit and gently open the date. Tuck a piece of chocolate (or a few chocolate chips) into the center of each date.

- Step 2: Place the marshmallow on top of the chocolate.

- Step 3: Arrange the stuffed dates in a lined air fryer basket. Air fry at 400°F for 3 to 5 minutes, or until the marshmallows are golden and gooey.

- Step 4: Tuck a graham cracker into the side of each date (or sprinkle with crushed graham crackers). Enjoy while the chocolate is still melty and the marshmallows are warm and toasted!
No Air Fryer? No Problem!
Broil them in the oven for 1-2 minutes, until the marshmallow is golden and toasty. Keep a close eye on them so the marshmallows don’t burn!
Megan’s Tips
- Use medjool dates: They are larger, softer, and taste much sweeter than other date varieties, such as Deglet Noor.
- Cut your marshmallows: If you’re using large marshmallows, cut them in half so they fit inside the date.
- Don’t over-air fry: I find that 3–4 minutes is usually perfect. Just like when making classic s’mores, you’ll know it’s done once the marshmallows are golden on top (and not on fire!).
- Serve warm: There really isn’t anything better than a warm stuffed date, especially when the chocolate is melty and the marshmallows are warm and toasted… pure bliss!

- Add a little peanut butter. Add a spoonful of peanut butter inside the date before adding the chocolate and marshmallow for a peanut butter s’mores twist. Anyone else used to make their s’mores with Reese’s peanut butter cups?
- Sprinkle with flaky sea salt. A pinch of flaky sea salt for that sweet + salty combo.
- Add them to a dessert board. Serve them alongside fresh strawberries, sliced apples, and homemade date caramel for a fun summer dessert board.
