I’m always excited when fresh, juicy strawberries are in season. As a long-time matcha lover, I couldn’t let this season pass without creating some kind of strawberry matcha recipe. June is the perfect time to celebrate this sweet duo!
Since my stuffed dates series has been going viral, I knew I had to create a recipe starring these two favorites, so that was my inspiration behind creating this recipe! I’ve never seen it done before, and thought, wow, that would be delicious…
These little bites of bliss are no-bake and super easy to make. Perfect for a quick treat or sharing with friends (if you don’t eat them all in one sitting…like me…)

As I’m writing this, I’m struggling to find the words to describe how delicious they are. The other day, I hosted a matcha-themed get-together, and my friends devoured them. - Vegan Strawberry Yogurt: I use a strawberry-flavored vegan yogurt to double down on the strawberry vibes, but a regular vegan yogurt will work just as well.

- Vegan White Chocolate Chips: I melt Enjoy Life vegan white chocolate chips for the outer coating.
Optional: add a sprinkle of crushed freeze dried strawberries on top for a little extra pop!

How to Make Strawberry Matcha Stuffed Dates
- Prep the Dates: If your dates aren’t pitted, slice them lengthwise (without cutting all the way through) and remove the pits. Gently open them to create space for the filling. If your dates are a bit dry, soak them in warm water for 5–10 minutes and pat dry.
- Make the Strawberry Filling: In a small bowl, mix the non-dairy yogurt and diced strawberries.
- Stuff the Dates: Add a spoonful of the strawberry filling into each date. Place in the freezer for 1-2 hours, or until the filling is firm.
- Melt the White Chocolate: In a microwave-safe bowl, melt the vegan white chocolate chips until smooth. Then, stir in the matcha powder. It’ll turn a gorgeous green color!
- Coat the Dates: Dip each stuffed date into the matcha white chocolate until fully covered. Sprinkle with crushed freeze-dried strawberries (optional). Pop in the fridge for about 10–15 minutes until the chocolate sets. That’s it! You’ve got the dreamiest no-bake snack everrrr!
