What Does Matcha Taste Like?
There are two main types of matcha: ceremonial grade and culinary grade—and the one you choose will affect the flavor!
I always use ceremonial matcha. It’s the highest quality you can buy, with a smooth, rich, and slightly sweet flavor. It also has that beautiful, vibrant green color!
On the other hand, culinary matcha is cheaper and typically used for baking or at cafés. But it has a bitter, earthy, and grassy taste, and the color is usually a dull green. If you’ve tried matcha before and didn’t love it, there’s a good chance you had a lower-grade culinary matcha—I’ve been there too!

- Chia Seeds: The chia seeds thicken as they absorb the liquid, creating that creamy, pudding-like texture.

- Non-Dairy Yogurt: Adds a super creamy texture.
- Non-Dairy Milk: Any non-dairy milk will work. I like to use soy milk. The non-dairy milk gels with the chia seeds to create a creamy pudding consistency.
- Maple Syrup: For natural sweetness. You can also substitute with honey or agave.
- Vanilla Extract: Enhances the overall flavor.
How To Make Matcha Chia Pudding
- Whisk the Matcha: Whisk the matcha and non-dairy milk until no clumps remain.
- Stir in the Remaining Ingredients: Mix in the non-dairy yogurt, maple syrup, and vanilla extract. Then, pour in the chia seeds and mix until combined. Let it sit for 5 minutes, stir again, then cover and refrigerate overnight to let the pudding set.

Matcha Chia Pudding
Ingredients
- 6 tbsp chia seeds
- 1 ½ cups non-dairy milk
- 1 ½ tsp matcha powder, ceremonial grade
- ¼ cup non-dairy yogurt
- 3 tbsp maple syrup
- 1 tsp vanilla extract
Instructions
- Use a bamboo whisk or milk frother to mix the matcha powder and non-dairy milk until no clumps remain. Pour into a bowl, then mix in the non-dairy yogurt, maple syrup, and vanilla extract.
- Pour in the chia seeds and mix until combined. Let it sit for 5 minutes, stir again, then cover and refrigerate overnight to let the pudding set.
