Whenever my sweet tooth hits, I know exactly what I’m reaching for — one (or two) of these Peanut Butter & Chia Jam Stuffed Dates. They’re the perfect bite-sized treat, sweet + salty, made with nutritious ingredients and incredibly delicious.

Peanut butter and jelly is one of the most notorious flavor combinations. This recipe is a bit of a twist on the classic PB&J. Instead of using jelly as a counterpart to the peanut butter, we’re making chia jam. Not only is the chia jam delicious, but it’s also better for you, since it has added nutrients thanks to the chia seeds!

This easy recipe is perfect for when you’re craving something sweet and wholesome but don’t have much time. You only need 4 ingredients to make these stuffed dates, including: dates, peanut butter, chia jam, and dark chocolate. The dates are stuffed with peanut butter and chia jam, then sprinkled with dark chocolate chunks. Sometimes I garnish with hemp seeds too for some added protein.

Of course, no baking is required in this recipe (except preparing the chia jam on the stovetop). It’s vegan, gluten-free and refined sugar-free. I think you’ll love it!

Dates, dates, dates!

If you couldn’t tell already, I’m a huge fan of dates. Dates are my favorite natural sweetener to use when baking. This recipe uses medjool dates for a naturally sweet base.

Dates are a superfruit! They’re a great source of nutrients and vitamins such as potassium, magnesium, vitamins B6 and K, calcium and iron, which contribute to various health benefits. They also provide a natural energy boost and are low on the glycemic index so your blood sugar won’t spike when eating them.

Ingredients needed

  • Medjool Dates – I use Joolies Dates (shop with my discount code: BOOBOO for money off). It’s important to use medjool dates as opposed to other types of dates since medjool dates are super sweet. 
  • Peanut Butter – I use natural peanut butter with peanuts as the only ingredient. If you’re allergic to peanut butter, you can swap for another nut or seed butter.
  • Chia Jam – a nutritious alternative to store-bought jelly. The recipe for my homemade chia jam is linked in the recipe card below. If you don’t have time to make chia jam (though, I highly urge you to!), you can also use any other jelly/jam.

Make stuffed dates in 2 simple steps

  • Step 1 – make the chia jam per the recipe card below. Place in the fridge to set.
  • Step 2 – if your dates still have the pit in them, cut a slice down the middle of each date and remove the pit. Fill the dates with peanut butter, chia jam, and sprinkle with chopped dark chocolate. Enjoy right away!

  • Follow the instructions to make the chia jam here.
  • If your dates still have the pit in them, cut a slice down the middle of each date and remove the pit. Place them on a parchment lined baking sheet.
  • Fill the center of each date with 1 teaspoon of peanut butter, followed by 1 teaspoon of the chia jam.
  • Sprinkle with chopped dark chocolate chunks. Enjoy!
