Love matcha? Try these Strawberry Matcha Stuffed Dates, made with a creamy strawberry filling and matcha white chocolate shell. Easy, no-bake, and vegan!
If your dates aren’t pitted, slice them lengthwise (without cutting all the way through) and remove the pits. Gently open them to create space for the filling. If your dates are a bit dry, soak them in warm water for 5–10 minutes and pat dry.
In a small bowl, mix together the non-dairy yogurt and diced strawberries.
Add a spoonful of the strawberry filling into the center of each date. Place in the freezer for 1-2 hours, or until the filling is firm.
In a microwave-safe bowl, melt the vegan white chocolate chips until smooth. Then, stir in the matcha powder.
Dip each stuffed date into the matcha white chocolate until fully covered.
Optional: sprinkle with crushed freeze-dried strawberries.
Place them in the fridge for about 10–15 minutes until the chocolate sets. Enjoy!
