Passionfruit Chia Pudding
This Passionfruit Chia Pudding is the ultimate summer breakfast or healthy snack. It’s tropical, refreshing, and perfect for meal prep.

I can’t think of a more perfect summer breakfast than passionfruit chia pudding—it’s like sunshine in a jar! Tropical, naturally sweet, and refreshing.
My all-time favorite fruit is passionfruit. Fun fact: my grandpa planted a passionfruit vine just so he could gift me boxes of them year-round. (Yes, his green thumb is that impressive!)
Passionfruit is slightly tart, perfectly sweet, and I always describe it as tasting like a tropical Starburst. Plus, it’s packed with antioxidants, vitamin C, and other nutrients to support a healthy immune system—meaning it’s just as good for you as it is delicious!
And if you love quick, make-ahead breakfasts as much as I do, chia pudding is a total game changer. This tropical version is perfect for summer meal prep and keeps well in the fridge for several days.

- Maple Syrup: The natural sweetener to contrast the slight tartness of the passionfruit.
- Vanilla Extract: Just a drop to enhance all the flavors.
- Non-Dairy Yogurt: For layering. I use plain or vanilla yogurt.
How to Make Passionfruit Chia Pudding
- Mix the Ingredients: Stir together the chia seeds, non-dairy milk, maple syrup, vanilla extract, and chia seeds. Let it sit for 5 minutes, then stir again.

Pro Tip: Store in small jars for easy, grab-and-go breakfasts during the week!
Storage & Meal Prep Tips
- Fridge: Store in airtight jars or containers for up to 3-5 days. The texture will become thicker and creamier as it sits.
- Meal Prep: Divide the mixture into small jars or containers and pack your favorite toppings for an easy grab-and-go breakfast. I would store the toppings separately — it’s best to add them on fresh!
- More Servings: This recipe makes 2 servings, so if you’d like, make a double or triple batch at the start of the week to have in the fridge for a quick breakfast, healthy snack, or fruity dessert throughout the week.
