In a small bowl, stir together the chia seeds, non-dairy milk, maple syrup, vanilla extract, and chia seeds. Let it sit for 5 minutes, then stir again. Cover and refrigerate for at least 4 hours, or overnight.
The next morning, layer the chia pudding, non-dairy yogurt, and pulp from the passionfruit. Top with half of a passionfruit and granola, if desired. Enjoy!
