Continuing my stuffed date series, this recipe was inspired by peak blueberry season and my craving for a quick blueberry crisp without the need to turn on the oven.

  • Medjool Dates: The naturally sweet, chewy base that holds all the blueberry goodness! Make sure to use medjool dates, as opposed to other varieties of dates, for the best flavor
  • Fresh Blueberries: The star of the show! Blueberries are in season and so sweet right now. I’ve been eating them by the handful!
  • Maple Syrup: Adds natural sweetness. You can substitute for honey if you’re not vegan.
  • Cornstarch (or Arrowroot Powder): Helps thicken the blueberry compote.
  • Lemon Juice: A squeeze of lemon juice helps brighten the blueberry compote and balances the sweetness.
  • Rolled Oats: The base of the crisp topping. Use certified gluten-free oats if needed.
  • Almond Flour: To make the crisp topping.
  • Chopped Walnuts: Adds some crunch to the crisp topping. Feel free to substitute for another nut.
  • Sliced Almonds: Adds some crunch to the crisp topping. Feel free to substitute for another nut.
  • Vanilla Extract: Brings a depth of flavor to the crisp topping.

How to Make Blueberry Crisp Stuffed Dates

  1. Make the Blueberry Compote: Add the blueberries, maple syrup, cornstarch (or arrowroot), and a squeeze of lemon juice to a saucepan over medium heat. Use a fork or potato masher to gently crush the berries, leaving some whole for texture. Bring to a boil, then reduce heat and simmer for 5-7 minutes, stirring occasionally, until the compote thickens.
  2. Make the Crisp Topping: In a small bowl, mix together the rolled oats, almond flour, chopped walnuts, sliced almonds, maple syrup, and vanilla extract until combined.
  3. Stuff the Dates: If your dates still contain the pits, use a knife to make a shallow slice down the middle of each date (be careful not to slice all the way through) and remove the pit. Gently open each date to make room for the filling, then add a spoonful of the warm blueberry compote and sprinkle with the crisp topping.
  4. Air Fry: Place the stuffed dates in the air fryer basket and cook at 400°F for 4-5 minutes, or until the topping is golden and crisp. The result? A gooey, fruity, and crunchy bite of heaven. Enjoy!!

  • Use fresh blueberries. Putting blueberry season to good use! Frozen blueberries will work too—just thaw and drain excess liquid before cooking the compote.
  • Keep an eye on the air fryer. Keep an eye on the crisp topping as it can go from golden to burnt quickly! If you don’t have an air fryer, baking at 350°F for 8-10 minutes works great too.

Storing Leftover Blueberry Crisp Stuffed Dates

Keep them in an airtight container in the fridge for up to 3 days. To reheat, pop them in the air fryer or oven for a few minutes to bring back that crispy topping. Or, enjoy them cold, they’re just as delicious!
