If you love Snickers bars, you’re going to be obsessed with these! Stuffing dates is one of my favorite things to do, as you can tell from my creations like cosmic brownie stuffed datespistachio stuffed datescookie dough stuffed dates, and samoas stuffed dates. They’re like the perfect canvas for recreating all the nostalgic treats but with a wholesome twist.

Snickers were my favorite candy as a kid, right next to peanut butter cups and twizzlers (chaotic combo, I know). So naturally I wanted to recreate that same nostalgic flavor, but in a better-for-you way.

Enter: these snickers stuffed dates. They have all the best parts of the classic candy bar: creamy peanut butter, crunchy peanuts, chewy caramel, and rich chocolate, but made with only 4 ingredients and ready in 25 minutes.

They’re bite-sized, freezer-friendly, and sooo easy to make. Truly, they taste just like a Snickers bar, only vegan, gluten-free, and refined sugar-free. I love serving them at parties or keeping a stash in the freezer for a late-night treat.

Ingredients You’ll Need

  • Medjool Dates: Soft, chewy, naturally sweet, and perfect for stuffing! They perfectly mimic the caramel layer in traditional Snickers. Make sure to use medjool dates as opposed to other varieties for the best flavor and texture.
  • Peanut Butter: For filling the dates.
  • Chopped Peanuts: Adds crunch and extra peanut flavor.
  • Vegan Chocolate: For dipping the stuffed dates.
  • Coconut Oil: Optional, but I like to use a little to thin the chocolate for easier dipping.

How to Make Snickers Stuffed Dates

  1. Prep the dates: If your dates still have the pit in them, cut a slice down the middle of each date (don’t cut all the way through) and remove the pit. 
  2. Stuff the dates: Add a spoonful of peanut butter into the center of each date, then add a sprinkle of chopped peanuts. Place on a parchment-lined plate or tray and freeze for 20 minutes to firm up.
  3. Melt the chocolate: In a microwave-safe bowl, melt the chocolate until smooth, adding coconut oil if needed to thin the chocolate.
  4. Coat the dates: Use a fork to dip each date into the melted chocolate, fully coating it. Place on the parchment-lined plate and sprinkle with chopped peanuts before the chocolate fully sets.
  5. Chill: Place the dates in the fridge for 5 minutes to let the chocolate harden. Optional (but highly recommended): add a sprinkle of flaky sea salt for that sweet-salty bite.

  • Use fresh medjool dates: Fresh medjool dates are soft, caramel-like, and naturally sweet. If your dates are a bit dry, soak them in warm water for 10 minutes, then pat dry.
  • Add a sprinkle of flaky sea salt: I love to add a pinch of flaky sea salt on top, it adds the perfect sweet-salty bite.
  • Make it your own: Use almond butter, cashew butter, or sunflower seed butter for a nut-free option.

Storing Snickers Stuffed Dates

If they’re not all gone within 5 minutes…here’s how to store your snickers stuffed dates!

  • Fridge: Store in an airtight container for up to 1 week.
  • Freezer: Freeze for up to 2 months. This is my favorite way to store them, just thaw at room temp.
