These snickers stuffed dates taste just like a Snickers bar, but with a healthier twist! Made with 4 simple ingredients: dates, peanut butter, peanuts, and dark chocolate, they're vegan, gluten-free, and ready in 25 minutes for an easy no-bake dessert!
Prep the dates: If your dates still have the pit in them, cut a slice down the middle of each date (be careful not to cut all the way through) and remove the pit.
Stuff the dates: Add a spoonful of peanut butter to the center of each date, then add a sprinkle of chopped peanuts. Place in the freezer for 30-60 minutes, until the filling is firm.
Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips until smooth. If needed, add 1 tsp of coconut oil to thin the chocolate (this will make dipping easier, too!).
Coat the dates: Use a fork to dip each date into the melted chocolate, fully coating it. Sprinkle with more chopped peanuts before the chocolate sets.
Chill: Place the dates in the fridge for 5 minutes to let the chocolate harden. If desired, add a sprinkle of flaky sea salt for that sweet-salty bite. Enjoy!

Use fresh medjool dateswhich are soft, caramel-like, and naturally sweet. Other varieties, such as deglet noor, tend to be smaller, less soft, and not as sweet. If your dates feel dry, soak them in warm water for 10 minutes to rehydrate, then pat dry.
Add 1 tsp of coconut oil when you're melting your chocolate to create a smoother, glossier coating. It also makes it much easier to dip the stuffed dates.
Finish with a sprinkle of flaky sea salt for a sweet + salty bite!
Swap the peanut butter for almond butter, cashew butter, or sunflower seed butter for a nut-free option.
Store any leftovers in an airtight container in the fridge for up to 1 week, or in the freezer for up to 2 months.
