Healthy Snickers Bites are the best treat to keep stocked in your freezer. I don’t know about you, but I’m always looking for a little sweet but salty treat after dinner. Well, let’s be honest, after lunch, too. These snickers bites tick all the boxes!

Layered with dates, peanut butter, crunchy peanuts, and encased in a chocolate coating. The result? A perfectly sized sweet but salty treat that will satisfy your sweet tooth with one (or two) bites.

What I love about these snickers bites (besides how delicious and healthy they are), is that they are SO easy to make! They’re actually made in an ice cube mold. Simply layer all the ingredients together, freeze, then pop out of the mold and pop into your mouth!

Using ice cube molds makes it easy to portion this recipe into delicious little bites. You’ll have perfectly sized snickers bites ready to enjoy whenever. Be sure to use a silicone ice cube mold so they pop out easily.

Ingredients Needed

  • Medjool Dates – the chewiness from the dates creates a similar texture to caramel in traditional Snickers, but obviously much healthier! Dates are a great source of nutrients and vitamins such as potassium, magnesium, vitamins B6 and K, calcium and iron, which contribute to various health benefits.   • Peanut Butter – the creaminess from the peanuts mixed with the chewiness from the dates creates the perfect caramel texture!
  • Peanuts – chopped peanuts add some crunch.
  • Dark Chocolate – I use Hu Chocolate Chips (shop with my discount code BOOBOO for money off). Feel free to use your favorite chocolate chips, chunks or bar. 
  • Coconut Oil (optional) – just a little to help thin the chocolate if your chocolate is super thick. Make sure to use refined coconut oil so it doesn’t have coconut flavor.

Healthy Snickers Bites (4 ingredients)

  • Cut each medjool date into 4 even pieces, so you have 16 pieces total. Set aside.
  • Melt the chocolate chips and coconut oil (if using) in the microwave.
  • Pour ½ tbsp of the melted chocolate into the bottom of each ice cube mold. Use a knife or spoon to spread the chocolate up the sides a bit.
  • Then, in each mold, layer as follows: medjool date, ½ tbsp peanut butter, 1 tsp crushed peanuts.
  • Pour ½ tbsp of the melted chocolate on top, then place in the freezer for 10 minutes to set.
  • Carefully pop the bites out of the silicone mold and enjoy!
