Each bite has layers of chewy dates, creamy peanut butter, crunchy peanuts, and a dark chocolate coating. Simply layer the ingredients, freeze until firm, and enjoy a homemade treat that tastes just like a Snickers bar, but much better-for-you.

  • Medjool Dates: The natural chewiness of the dates creates a similar texture to caramel in traditional Snickers. Same reason I use them in my Snickers Stuffed Dates!
  • Peanut Butter: The creaminess from the peanut butter mixed with the chewiness from the dates creates the perfect caramel texture. Crunchy peanut butter works well here too!
  • Peanuts: Adds a crunchy layer.
  • Dark Chocolate: Use your favorite vegan chocolate chips, chunks or bar. 

How to Make Healthy Snickers Bites

  1. Step 1: Cut each date into 4 equal pieces, giving you 16 pieces total. Add a spoonful of melted chocolate into the bottom of each mold. Use the back of a spoon to spread the chocolate up the sides. Place one piece of date into the bottom each mold.

  1. Step 3: Sprinkle with crushed peanuts. Finish with another spoonful of melted chocolate. Place the mold in the freezer for about 10 minutes, or until the chocolate is firm.

  • Use medjool dates: Medjool dates are soft, large, naturally sweet, and caramel-like, which is exactly what we want when mimicking the texture of Snickers!
  • Add a little coconut oil to the chocolate: If your chocolate seems thick when melting it, add ½ teaspoon melted coconut oil to help thin it out.
  • Use a silicone ice cube mold: This is key to easily removing the bites from the mold. If you don’t have a silicone ice cube mold, you can use a mini silicone muffin pan, or line a small loaf pan with parchment paper, layer the ingredients, freeze, and slice into squares once firm.

  • Prepare the dates: If your medjool dates aren't already pitted, remove and discard the pits. Cut each date into 4 equal pieces, giving you 16 pieces total. Set aside.
  • Melt the chocolate: Add the chocolate chips to a microwave-safe bowl and microwave in 30-second intervals, stirring between each, until fully melted.
  • Create the chocolate base: Spoon a small amount of melted chocolate into the bottom of each cavity of a silicone ice cube mold. Use the back of a spoon or a knife to spread the chocolate slightly up the sides.
  • Assemble the bites: Place one piece of date into the bottom each mold. Top with a spoonful of peanut butter, then sprinkle with crushed peanuts. Finish with another spoonful of melted chocolate, spreading it to completely cover the filling.
  • Freeze: Place the mold in the freezer for about 10 minutes, or until the chocolate is firm.
