Banana Bread Oatmeal Cookies
Peanut Butter Banana Bread Oatmeal Cookies are like if banana bread met oatmeal cookies. A perfect grab & go breakfast or snack that’s vegan, gluten free & naturally sweetened.
Imagine banana bread met oatmeal cookies. These cookies are soft and chewy like banana bread, and nutty and sweet like oatmeal cookies. The best part is that they’re made with wholesome ingredients that are vegan and gluten free, and they’re naturally sweetened with dates. You likely already have all of the ingredients in your pantry to make them. Plus, who can say “no” to a delicious, healthy cookie?
The snow is coming down hard here today. The first snowfall of the year – yay! Naturally, we were craving some warm, fresh baked cookies. I had this idea to combine two of our favorite baked goods – banana bread and oatmeal cookies. I am so happy with how this recipe turned out. Made with wholesome ingredients – these cookies are dreamy!
Ingredients Needed
- Bananas – this recipe calls for two ripe bananas.
- Medjool Dates – soft, pitted and juicy medjool dates. Be sure to use medjool dates as they are the sweetest variety. I use Joolies Organic Fresh Medjool Dates. Use my discount code: BOOBOO for money off.
- Peanut Butter – make sure to use an all natural runny peanut butter. The only ingredients in the peanut butter I buy are peanuts and salt.
- Non-Dairy Milk – any non-dairy milk will work. I like to use soy milk.
- Vanilla Extract – to add a depth of flavor.
- Quick Oats – rolled oats will also work, but the texture will be a little different. Use certified gluten free oats if necessary.
- Almond Flour – this helps create that super soft, melt-in-your-mouth texture.
- Flaxseed Meal – this helps bind the cookies together. It also provides a variety of nutritional benefit as it is high in fiber and omega-3 fatty acids.
- Chopped Walnuts – adds a crunch to the cookies, as well as healthy fats.
- Dark Chocolate Chunks or Chips – I use Hu Kitchen Chocolate Gems, chocolate chips or chocolate chunks when making these cookies. Hu Kitchen’s chocolate is great because it’s made with clean ingredients and is refined sugar free. Use my code BOOBOO for a discount!
- Cinnamon – adds a nice flavor as well as antioxidants.
- Sea Salt – just a pinch to bring out all the flavors. I also highly recommend sprinkling the cookies with flakey salt once they come out of the oven. It takes them to the next level!
How To Make Banana Bread Oatmeal Cookies
Step 1: Blend the bananas, medjool dates, peanut butter, non-dairy milk and vanilla extract.
Step 2: Mix the blended mixture in with the dry ingredients: oats, almond flour, flaxseed meal, walnuts, chocolate chunks, cinnamon and salt.
Step 3: Scoop about 2 tablespoons of the mixture using a cookie scoop and place on the baking sheet. Add some more chocolate chunks for haha’s.
Step 4: Bake the cookies at 350ºF for 18 minutes. Once they’re done baking, remove from the oven and sprinkle with flakey sea salt. Enjoy!
Tips and Substitutions
- Use an all natural runny peanut butter. It should be a thin consistency, not thick. The only ingredients should be peanuts and salt. I use Costco or Trader Joe’s brand, or I make my own peanut butter! If you’re allergic to peanut butter, feel free to use almond butter, cashew butter, or sunflower seed butter.
- I like to use Hu Kitchen Chocolate Gems, chocolate chips or chocolate chunks when making these cookies. Peanut Butter Banana Bread Oatmeal Cookies
Ingredients
- 2 ripe bananas
- 5 medjool dates, pitted
- 1/2 cup peanut butter, runny
- 3 tablespoons non-dairy milk
- 1/2 teaspoon vanilla extract
- 1 cup quick oats, use gluten free if needed
- 1/4 cup almond flour
- 2 tablespoons flaxseed meal
- 1/3 cup chopped walnuts
- 1/3 cup vegan chocolate chips, or chunks
- 1 teaspoon cinnamon
- 1/2 tsp salt
- flaky sea salt, for topping
Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- Add the bananas, medjool dates, peanut butter, non-dairy milk and vanilla extract to a food processor or blender and blend until creamy.
- Transfer the blended mixture to a mixing bowl and add in the dry ingredients: oats, almond flour, flaxseed meal, walnuts, chocolate chunks, cinnamon and salt. Mix until combined.
- Use a cookie scoop to scoop out 2 tablespoon size balls and place on the baking sheet. Add some more chocolate chunks on top of the cookies for haha’s.
- Bake for about 18 minutes. Remove from the oven and sprinkle with flaky sea salt. Enjoy!
