I’m back with another stuffed date recipe… this time inspired by one of my all-time favorite Girl Scout cookies: samoas.

If you love those chewy, coconut, chocolate-covered cookies as much as I do, you’re going to be obsessed with these samoas stuffed dates. Think gooey, caramel-y dates filled with a creamy peanut butter coconut mixture, then drizzled with dark chocolate. Perfection! I can’t stop eating them.

  • Medjool Dates: Dates are perfect for that gooey, caramel-like flavor. Naturally sweet, they’re packed with fiber, antioxidants and nutrients, making them the perfect base for healthy desserts.
  • Desiccated Coconut: This is essentially finely shredded coconut. You can make your own by quickly blending or chopping shredded coconut until it’s finely ground.
  • Peanut Butter: For the filling.
  • Vegan Chocolate: Use your favorite dairy-free chocolate chips or dark chocolate bar.

How to Make Vegan Samoas Stuffed Dates

  1. Prep the Dates: If your medjool dates still have pits, make a shallow slice down the middle of each date (be careful not to slice all the way through) and remove the pit. Gently open each date to make space for the filling.
  2. Make the Coconut Filling: In a small bowl, combine the desiccated coconut and peanut butter. Mix until everything is well combined. The mixture should be moist and hold together when pressed between your fingers. If it’s too dry, add a bit more peanut butter until you reach the right texture.
  3. Stuff the Dates: Spoon the coconut mixture into the middle of each date. Drizzle with melted chocolate. Place in the fridge to allow the chocolate to set. Enjoy!
