I’m back with another stuffed date recipe… this time inspired by one of my all-time favorite Girl Scout cookies: samoas.
If you love those chewy, coconut, chocolate-covered cookies as much as I do, you’re going to be obsessed with these samoas stuffed dates. Think gooey, caramel-y dates filled with a creamy peanut butter coconut mixture, then drizzled with dark chocolate. Perfection! I can’t stop eating them.
Made with 4 ingredients and ready in less than 10 minutes, they’re the perfect guilt-free snack that’s vegan, gluten-free, and naturally sweetened.

- Medjool Dates: Dates are perfect for that gooey, caramel-like flavor. Naturally sweet, they’re packed with fiber, antioxidants and nutrients, making them the perfect base for healthy desserts.
- Desiccated Coconut: This is essentially finely shredded coconut. You can make your own by quickly blending or chopping shredded coconut until it’s finely ground.
- Peanut Butter: For the filling.
- Vegan Chocolate: Use your favorite dairy-free chocolate chips or dark chocolate bar.
How to Make Vegan Samoas Stuffed Dates
- Prep the Dates: If your medjool dates still have pits, make a shallow slice down the middle of each date (be careful not to slice all the way through) and remove the pit. Gently open each date to make space for the filling.
- Make the Coconut Filling: In a small bowl, combine the desiccated coconut and peanut butter. Mix until everything is well combined. The mixture should be moist and hold together when pressed between your fingers. If it’s too dry, add a bit more peanut butter until you reach the right texture.
- Stuff the Dates: Spoon the coconut mixture into the middle of each date. Drizzle with melted chocolate. Place in the fridge to allow the chocolate to set. Enjoy!

- Use medjool dates: Medjool dates are soft, large, naturally sweet, and caramel-like. Other varieties tend to be smaller, less tender, and not as sweet.
- Finish with flaky sea salt: Adds the perfect sweet-salty balance.

If you have leftovers (lucky you!), store them in an airtight container in the fridge for up to 1 week. They also freeze well for longer storage!

Ingredients
- 10 medjool dates

- ¼ cup vegan chocolate chips, or chocolate bar
Instructions

- Melt the chocolate in the microwave, stirring every 30 seconds until completely melted.
- Add a spoonful of the coconut mixture into the middle of each date.
- Drizzle the dates with melted chocolate. Place in the fridge to allow the chocolate to set. Enjoy!

These were very good, but i really couldn’t taste the coconut as the peanut butter flavor was so strong, but still delicious! Any way to make them taste more like coconut?
