These Samoas Stuffed Dates are a healthier version of the classic Samoas cookies, made with gooey dates, shredded coconut, peanut butter, and dark chocolate. Ready in 10 minutes and no baking required!
If your medjool dates still have pits, make a shallow slice down the middle of each date (be careful not to slice all the way through) and remove the pit. Gently open each date to make space for the filling.
In a small bowl, combine the desiccated coconut and peanut butter. Mix until everything is well combined. The mixture should be moist and hold together when pressed between your fingers. If it's too dry, add a bit more peanut butter until you reach the right texture.
Melt the chocolate in the microwave, stirring every 30 seconds until completely melted.
Add a spoonful of the coconut mixture into the middle of each date.
Drizzle the dates with melted chocolate. Place in the fridge to allow the chocolate to set. Enjoy!

Notes
Use medjool dates: Medjool dates are soft, large, naturally sweet, and caramel-like. Other varieties tend to be smaller, less tender, and not as sweet.
Finish with flaky sea salt: Adds the perfect sweet-salty balance.
Storage. If you have leftovers (lucky you!), store them in an airtight container in the fridge. They also freeze well for longer storage.
