Overnight oats are one of my favorite breakfasts, ever. They’re a high-fiber, high-protein breakfast that takes just five minutes to prep, which means breakfast is waiting for you the next morning. Is there anything better?

As we transition into fall, I can’t help but make cozy fall flavors, like pumpkin pie overnight oats and these apple cinnamon overnight oats. These oats are extra creamy thanks to quick oats and a thick vegan yogurt, while freshly shredded apple, warm cinnamon, and a touch of maple get mixed right in. It basically tastes like apple pie in breakfast form.

Apple Pie, But Make It Breakfast

  • Apple pie flavor: Freshly shredded apple, cinnamon, maple syrup, and vanilla bring all the cozy fall flavor.
  • 5-minute prep: Stir everything together, refrigerate, and breakfast is ready in the morning.
  • Extra creamy: Quick oats + thick vegan yogurt create a soft, almost pudding-like texture.
  • Great for meal prep: Make several jars at once and keep them refrigerated for easy breakfasts throughout the week.

If overnight oats are your thing (same), try my carrot cake overnight oats, pistachio overnight oats, or tiramisu overnight oats next.

I originally made these with warm cinnamon apples spooned over the top, inspired by my air fryer apples. Delicious? Yes. Ideal for overnight-oat meal prep? Not exactly. So I switched to freshly shredded apple, which gets mixed right into the oats for apple flavor in every bite, without any extra cooking.

The Simple List of Ingredients

Less than 10 ingredients stand between you and these oats!

Ingredients for apple cinnamon overnight oats including oats, oat milk, apple, vegan yogurt, nut butter, chia seeds, cinnamon, and maple syrup.
  • Quick Oats: My secret to extra-creamy overnight oats. Quick oats soften more than old-fashioned rolled oats, giving these a soft, almost pudding-like consistency. If you prefer more chew, you can substitute rolled oats.
  • Apple: One apple gets freshly shredded and stirred right into the oats, adding plenty of apple flavor. Honeycrisp is my favorite because it’s sweet, crisp, and holds up well. Same reason I use it in my healthy apple crisp.
  • Non-Dairy Milk: Oat, soy, almond, or cashew milk all work.
  • Non-Dairy Yogurt: This is another key to the creamy texture. I use a thick, unsweetened vegan yogurt, like Siggi’s or Cocojune.
  • Almond Butter: Adds richness and a subtle nutty flavor that makes these taste even more like apple pie. Swap for any other nut butter, such as peanut butter or cashew butter.
  • Chia Seeds: Helps thicken the oats, giving them that pudding-like texture.
  • Maple Syrup: Adds just enough natural sweetness.
  • Vanilla Extract: A little vanilla rounds out the flavors.
  • Cinnamon: The main spice here.

Why Quick Oats?

Most overnight oat recipes use rolled oats, but I actually prefer quick oats. They soften more overnight, giving the oats an almost pudding-like texture. Add a thick vegan yogurt and you get an extra-creamy breakfast that feels a little more like apple pie filling. YUM x1000.

  1. Step 2: Stir really well, making sure the chia seeds are mixed in. We don’t want them clumping together! Cover and refrigerate for at least 4 hours, but preferably overnight, until thick and creamy.

Let’s Talk Toppings

I love adding a few different textures on top, especially something creamy + something crunchy.

Here are some ideas:

Megan’s Overnight Oats Tips

  • Stir really well: Chia seeds love to clump together. Give everything a thorough stir before refrigerating.
  • Add a splash of milk if needed: Overnight oats continue to thicken as they sit. If they’re too thick, stir in a splash of non-dairy milk.
  • Keep crunchy toppings separate: If you’re meal prepping, add granola, nuts, or diced apple just before eating so they stay crisp.

Frequently Asked Questions

What type of oats should I use for overnight oats?

This recipe uses quick oats because they create an especially soft and creamy texture. Old-fashioned rolled oats also work if you prefer more chew, but the finished oats won’t be quite as pudding-like. I don’t recommend steel-cut oats for this recipe because they need more time and liquid to soften properly.

How long do overnight oats need to soak?

These overnight oats need at least 4 hours in the refrigerator to soften and thicken, but I prefer chilling them overnight for the creamiest texture.

How long do overnight oats last in the fridge?

Store these apple cinnamon overnight oats in an airtight container in the refrigerator for up to 5 days. If you’re meal prepping, make several jars at once for an easy grab-and-go breakfast!

Can I eat apple overnight oats warm?

Yes! Prepare the oats as directed, then warm them in the microwave for 30–60 seconds or gently heat them on the stovetop. You may need to stir in a splash of non-dairy milk to loosen them.

What kind of apple is best for overnight oats?

I like Honeycrisp for its sweet-tart flavor and crisp texture, but you can use your favorite apple. Fuji, Gala, Pink Lady, or Granny Smith are all delicious options!
