What Are Energy Balls?
Energy balls, also known as bliss balls or energy bites, are sweet no-bake treats made with healthy ingredients that are high in energy and protein. Most energy balls use dates as the base. Dates are a great source of plant-powered energy, they help bind all the ingredients together thanks to their sticky texture, and they add the perfect amount of natural sweetness!
Energy balls take five minutes to make and are a great option for on-the-go snacks and breakfast options. The flavor possibilities are endless! My Peanut Butter Date Energy Balls are another favorite – they taste like a healthy peanut butter cup!

Ingredients Needed

- Pistachios – I buy my pistachios already shelled from Trader Joe’s.
- Shredded coconut – make sure to get unsweetened, not sweetened.
- Pepitas – pepitas are shelled pumpkin seeds. I buy mine from Whole Foods.
- Vanilla extract – to add a depth of flavor.
- Matcha – this is optional, but it adds more green color and a caffeine boost! Plus, matcha is high in antioxidants. If adding, make sure to use a good quality matcha for the best flavor. My favorite matcha is from Ippodo Tea.
- Hemp seeds – I like to roll the balls in hemp seeds for a nice presentation and extra protein. Did you know just 2 tablespoons of hemp seeds has 10 grams of protein?!
Pepitas vs Pumpkin Seeds
This recipe uses pepitas, which are essentially shelled/hulled pumpkin seeds. They are green in color. I buy mine from Whole Foods.
How To Make Pistachio Energy Balls in 2 Easy Steps
- To a food processor, add the dates, pistachios, coconut, pepitas, vanilla, water and matcha (if using). Process this mixture until it starts to come together. If it’s not coming together and is still crumbly, you may need to add another tablespoon of water. The mixture should stick together when you form it into a ball with your hands.
- Scoop out 1-2 tablespoons of the mixture and roll into balls. Optionally, roll the balls in hemp seeds and drizzle with pistachio butter. Enjoy!
Pro-tip: if your dates are dry and hard, add them to a bowl with hot water and soak for about 10 minutes until they are soft and rehydrated. Then, drain and pat dry.
How To Store Energy Balls
Store energy balls in the fridge for about one week or in the freezer for up to 3 months (let them thaw in the fridge overnight before enjoying).

Pistachio Energy Balls
Ingredients
- 10 medjool dates, pitted
- ½ cup pistachios
- ½ cup pepitas
- ½ cup shredded coconut
- ½ tsp vanilla extract
- 2 tbsp water
- 1 tsp matcha, optional
Instructions
- Add the dates, pistachios, shredded coconut, pepitas, vanilla extract, water and matcha (if using) to a food processor. Process this mixture until it starts to come together and sticks together when you form it into a ball with your hands. If it’s too crumbly, you may need to add another tablespoon of water.
- Using a small cookie scoop or a spoon, scoop out 1-2 tablespoon of the mixture and roll into evenly sized balls with your hands.
- Roll the balls in hemp seeds and drizzle with pistachio butter (optional). Enjoy!

I don’t have a food processor. Any suggestions for work around? Hope to make.
Do you have a high-speed blender? I haven’t made it in a blender, but it should work (might be a bit messy). Add the the pistachios, coconut and pepitas first, then the dates and water and pulse at a medium-high speed, using the tamper as needed. Let me know if you try it!
