Add the dates, pistachios, shredded coconut, pepitas, vanilla extract, water and matcha (if using) to a food processor. Process this mixture until it starts to come together and sticks together when you form it into a ball with your hands. If it’s too crumbly, you may need to add another tablespoon of water.
Using a small cookie scoop or a spoon, scoop out 1-2 tablespoon of the mixture and roll into evenly sized balls with your hands.
Roll the balls in hemp seeds and drizzle with pistachio butter (optional). Enjoy!

If your dates are dry and hard, add them to a bowl with hot water and soak for about 10 minutes until they are soft and rehydrated. Then, drain and pat dry.
