As we transition into fall, I can’t help but make these Apple Pie Overnight Oats for breakfast every single morning! They have all the flavors of apple pie but in a wholesome breakfast jar.
This recipe is really easy to make. The oats are infused with fall spices and topped with warm maple cinnamon apples and walnuts. It’s like having dessert for breakfast.

Ingredients Needed
- Apples – it wouldn’t be apple pie flavored without it! I like to use Honeycrisp apples.
- Rolled oats – rolled oats work best for overnight oats.
- Non-dairy milk – any unsweetened non-dairy milk will work. I like to use soy milk for extra protein.
- Almond butter – provides a creamy element and healthy fats. Feel free to substitute for other nut/seed butter of choice.
- Maple syrup – adds natural sweetness.
- Vanilla extract – only a little bit to enhance the flavor.
- Cinnamon and nutmeg – the cozy spices that tie everything together.
- Walnuts – I like to add some walnuts on top for crunch (totally optional).

How to Make Apple Pie Overnight Oats
- Add the oats, non-dairy milk, almond butter, maple syrup, vanilla extract, cinnamon, nutmeg, to a mason jar and stir to combine. Place in the fridge to set overnight or at least 4 hours.
- Just before serving, make the maple-cinnamon apple topping by adding the chopped apples, maple syrup and cinnamon to a saucepan over low heat.
- Top the oats with the maple-cinnamon apples and other desired toppings.

I recommend soaking the oats overnight for the best texture and flavor. The longer they soak, the better, since the oats get soft and the flavors mingle together. However, sometimes I wake up craving overnight oats, so I’ll make a “quick” version and let them soak in the fridge for 4 hours. They aren’t as creamy, but it gets the job done that is breakfast (lol!)
How long will overnight oats last in the fridge?

- 1 cup rolled oats
- 1 cup non-dairy milk
- 1 tbsp maple syrup
- 1 tbsp almond butter
- ½ tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp nutmeg
Maple Cinnamon Apples
- 1 apple, diced
- 1 tbsp maple syrup
- 1 tsp cinnamon
Instructions
- Add the oats, non-dairy milk, almond butter, maple syrup, vanilla extract, cinnamon, nutmeg, to a mason jar (or 2 small jars) and stir to combine. Place in the fridge to set overnight or at least 4 hours.
- Just before serving, make the maple cinnamon apple topping by adding the diced apples, maple syrup and cinnamon to a saucepan over low heat. Heat for 20-25 minutes, stirring occasionally and adding a drop of water as needed, until the apples are soft and caramelized.
- Top the oats with the warm apples and serve with desired toppings. I like to top these with chopped walnuts and a drizzle of nut butter.
