These Apple Pie Overnight Oats have all the flavors of apple pie and are the perfect make-ahead breakfast for fall. They're vegan, gluten-free and naturally sweetened with maple syrup.
Add the oats, non-dairy milk, almond butter, maple syrup, vanilla extract, cinnamon, nutmeg, to a mason jar (or 2 small jars) and stir to combine. Place in the fridge to set overnight or at least 4 hours.
Just before serving, make the maple cinnamon apple topping by adding the diced apples, maple syrup and cinnamon to a saucepan over low heat. Heat for 20-25 minutes, stirring occasionally and adding a drop of water as needed, until the apples are soft and caramelized.
Top the oats with the warm apples and serve with desired toppings. I like to top these with chopped walnuts and a drizzle of nut butter.
