It’s no secret that I love Snickers, and these snickers stuffed dates have all the best parts of the classic candy bar: creamy peanut butter, crunchy peanuts, chewy caramel (but made from dates), and rich chocolate. Whenever I’m craving something sweet, I reach into my freezer and grab one of these, or one of my healthy snickers bites.

The best part? They’re made with only 4 ingredients and ready in just 25 minutes. I love serving them at parties, gifting to friends, or keeping a stash in the freezer for a late-night treat.

How to Make Snickers Stuffed Dates

Here’s a step-by-step process of how to make snickers stuffed dates.

Medjool dates stuffed with peanut butter.
  1. Step 1: Slice each medjool date down the middle (without cutting all the way through) and remove the pit. Add peanut butter to the center each date.

  1. Step 2: Sprinkle with chopped peanuts for crunch. Place in the freezer for 30-60 minutes, until the filling is firm.

  1. Step 3: Melt the vegan chocolate chips in the microwave, stirring every 30 seconds, until smooth. Dip each stuffed date in the melted chocolate. Garnish with chopped peanuts and, if desired, flaky sea salt for that sweet-salty bite.

  1. Step 4: Place the dates in the fridge for 5 minutes to let the chocolate harden. Enjoy!

Megan’s Tips

  • Use fresh medjool dates. Fresh medjool dates are soft, caramel-like, and naturally sweet. Other varieties, such as deglet noor, tend to be smaller, less soft, and not as sweet. If your dates feel dry, soak them in warm water for 10 minutes to rehydrate, then pat dry.
  • Add a little coconut oil to the chocolate. Stir in 1 teaspoon of melted coconut oil when you’re melting your chocolate to create a smoother, glossier coating. It also makes it much easier to dip the stuffed dates.
  • Finish with a sprinkle of flaky sea salt. I love to add a pinch of flaky sea salt on top for a sweet + salty bite!

Storing Snickers Stuffed Dates

If they’re not all gone within 5 minutes (guilty)… here’s how to store your snickers stuffed dates:

  • Fridge: Store in an airtight container for up to 1 week.
  • Freezer: Freeze for up to 2 months. This is my favorite way to store them, just thaw at room temp.

FAQs

How do I store snickers stuffed dates?

Store your snickers stuffed dates in the fridge for up to 1 week or freeze for up to 2 months. They’re delicious straight from the fridge (or freezer) and taste like candy!

Are stuffed dates healthy?

I’d say so! Since stuffed dates are made with wholesome ingredients like dates, nuts, and dark chocolate, they’re definitely a better-for-you dessert option. Dates are naturally sweet (I like to call them nature’s candy!) and contain fiber and healthy fats.

Do I have to use medjool dates?

I highly recommend it! Medjool dates work best because they’re soft, large, naturally sweet, and caramel-like. Other varieties (such as deglet noor) tend to be smaller, less tender, and not as sweet.

Snickers Stuffed Dates

These snickers stuffed dates taste just like a Snickers bar, but with a healthier twist! Made with 4 simple ingredients: dates, peanut butter, peanuts, and dark chocolate, they're vegan, gluten-free, and ready in 25 minutes for an easy no-bake dessert!

Ingredients

Instructions

  • Prep the dates: If your dates still have the pit in them, cut a slice down the middle of each date (be careful not to cut all the way through) and remove the pit.
  • Stuff the dates: Add a spoonful of peanut butter to the center of each date, then add a sprinkle of chopped peanuts. Place in the freezer for 30-60 minutes, until the filling is firm.
  • Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips until smooth. If needed, add 1 tsp of coconut oil to thin the chocolate (this will make dipping easier, too!).
  • Coat the dates: Use a fork to dip each date into the melted chocolate, fully coating it. Sprinkle with more chopped peanuts before the chocolate sets.
  • Chill: Place the dates in the fridge for 5 minutes to let the chocolate harden. If desired, add a sprinkle of flaky sea salt for that sweet-salty bite. Enjoy!

Notes

  • Use fresh medjool dates which are soft, caramel-like, and naturally sweet. Other varieties, such as deglet noor, tend to be smaller, less soft, and not as sweet. If your dates feel dry, soak them in warm water for 10 minutes to rehydrate, then pat dry.
  • Add 1 tsp of coconut oil when you’re melting your chocolate to create a smoother, glossier coating. It also makes it much easier to dip the stuffed dates.
  • Finish with a sprinkle of flaky sea salt for a sweet + salty bite!
  • Swap the peanut butter for almond butter, cashew butter, or sunflower seed butter for a nut-free option.
  • Store any leftovers in an airtight container in the fridge for up to 1 week, or in the freezer for up to 2 months.
