My dessert-inspired oat obsession started with my tiramisu overnight oats, and now we’re officially bringing Girl Scout cookie season into the mix!

Since Samoas have always been my favorite Girl Scout cookie (right up there with Thin Mints and Tagalongs), turning them into a make-ahead breakfast felt kind of inevitable.

Enter: samoas overnight oats. Inspired by the classic Girl Scout cookie we all know and love, these oats are thick, creamy, and loaded with coconut, rich chocolate, and caramel flavor.

  • Coconut Milk: The oats soak overnight in coconut milk to absorb all that rich coconut flavor. I recommend using canned coconut milk for the creamiest consistency.
  • Cocoa Powder: For that rich chocolate flavor.
  • Peanut Butter: Mixed into the oats and drizzled on top. Feel free to swap with almond butter or cashew butter.
  • Maple Syrup: Adds just the right amount of natural sweetness.
  • Vanilla Extract: Just a drop to round everything out.
  • Coconut Flakes: Use toasted coconut flakes for the best flavor. You can buy them pre-toasted, or toast them yourself on a skillet.

  • Toast the coconut first: If your coconut flakes aren’t already toasted, I highly recommend toasting them! It takes just 3–5 minutes in a skillet and makes the flavor so much deeper.
  • Don’t skip the overnight soak. While 4 hours works in a pinch, soaking them overnight gives them the best texture and allows the flavors to fully come together.
  • Drizzle with date caramel. While this recipe is perfectly dreamy as written, if you want to take it over the top, drizzle on a spoonful of my date caramel.
