Inspired by the classic Girl Scout cookie, these Samoas Overnight Oats feature creamy chocolate-coconut oats that are drizzled with chocolate syrup and peanut butter. Vegan, gluten-free, fiber-rich, and perfect for meal prep!
Make the overnight oats: In a jar or bowl, combine the oats, cocoa powder, peanut butter, maple syrup, vanilla extract, and coconut milk. Stir until well combined.
Refrigerate overnight: Cover and place in the fridge overnight (or at least 4 hours).
Add toppings and enjoy: The next morning, add a layer of toasted coconut flakes, then drizzle with chocolate date syrup and peanut butter for that classic Samoas-style finish. Enjoy!
Notes
Use quick oats for the creamiest texture. I find that quick oats work best when making overnight oats because they soak up the liquid beautifully and create a super creamy texture.
Toast the coconut first: If your coconut flakes aren't already toasted, I highly recommend toasting them! It takes just 3–5 minutes in a skillet and makes the flavor so much deeper.
Don’t skip the overnight soak. While 4 hours works in a pinch, soaking them overnight gives them the best texture and allows the flavors to fully come together.
Drizzle with date caramel. While this recipe is perfectly dreamy as written, if you want to take it over the top, drizzle on a spoonful of my date caramel.
