I’m just a tiny bit obsessed with stuffing fruit crisp flavors inside medjool dates. If you’ve tried my blueberry crisp stuffed dates, then you know what I mean. It’s like a personal-sized fruit crisp tucked into a caramel-like edible container (dates).

Since it’s peak apple season, I’ve been craving my classic apple crisp, but I didn’t want to turn on the oven. So I made the next best thing: apple crisp stuffed dates.

Picture warm cinnamon apples tucked inside juicy medjool dates, sprinkled with an oat crisp topping, then air-fried until golden. They taste like a mini apple crisp with a hint of caramel flavor from the dates… mmm, autumn bliss. Oh and they’re ready in minutes, making them the ultimate quick (& healthy) fall dessert. Let’s get into it!

Why You’ll Love This Recipe

  • Tastes like a mini apple crisp in every bite
  • Quick and easy to make
  • Air-fried to golden, crispy perfection
  • Vegan, gluten-free, and naturally sweetened

Ingredients You’ll Need

  • Medjool Dates: Naturally sweet, chewy, and the perfect edible container! Make sure to use medjool dates (as opposed to other varieties of dates) for the best flavor.
  • Apple: Use a crisp variety (like Honeycrisp or Pink Lady) for the best flavor. Apples are in season and so sweet right now. I’ve been making my air fryer apples non-stop.
  • Maple Syrup: Adds natural sweetness and helps caramelize the apples.
  • Cinnamon: The warm spice to complement the apples.
  • Rolled Oats: The base of the crisp topping (use certified gluten-free oats if needed).
  • Almond Flour: To make the crisp topping.
  • Chopped Walnuts & Sliced Almonds: Adds some crunch to the crisp topping. Feel free to substitute for other nuts (like pecans or peanuts).
  • Vanilla Extract: Adds a depth of flavor to the crisp topping.

How to Make Apple Crisp Stuffed Dates

  1. Sauté the Apples: Add the peeled and diced apples, maple syrup, and cinnamon to a sauté pan over medium heat. Sauté for about 8-10 minutes, until soft and tender. Add a splash of water if needed.
  2. Make the Crisp Topping: In a small bowl, mix together the oats, almond flour, chopped walnuts, sliced almonds, maple syrup, and vanilla extract until crumbly.
  3. Prepare the Dates: Slice each date lengthwise (without cutting all the way through), remove the pit, and gently open to create space for filling.
  4. Stuff the Dates: Fill with the warm sautéed apples, then sprinkle with the crisp topping.
  5. Air Fry: Place the stuffed dates in the air fryer basket and cook at 400°F for 4-5 minutes, or until the topping is golden and crisp. Enjoy warm!

Megan’s Tips

  • Use good quality datesFresh medjool dates are the best for that chewy base.
  • Apple picking: We’re putting apple season to good use! I love Honeycrisp apples for their sweetness and crunch.
  • Watch the air fryer: Keep an eye on the crisp topping as it can go from golden to burnt very fast!
  • No air fryer? Bake in the oven at 350°F for 8–10 minutes instead.

Storing Leftovers

Keep them in an airtight container in the fridge for up to 3 days. To reheat, pop them in the air fryer or oven for a few minutes to bring back that crispy topping. Or, enjoy them cold, they’re just as delicious!

Living in New England, apple season is my favorite. These stuffed dates are a little bite of fall that’s perfect for fall gatherings. They taste best straight from the air fryer, all warm and gooey!
