These apple crisp stuffed dates are the easiest fall dessert! Warm cinnamon apples are tucked inside sweet medjool dates, topped with an oat crisp, and air-fried until golden. When apple season arrives, most of us immediately think of classic apple crisp, air fryer apples, vegan apple cider muffins, or healthy apple bread. But if you’re looking for a quick fall treat, these apple crisp stuffed dates are the next best thing!
Think of these as a shortcut to apple crisp, with all the warm, cozy flavors in just a few simple bites. Picture warm cinnamon apples tucked inside soft medjool dates, topped with a golden oat crisp crumble, then air-fried until perfectly crisp. Every bite tastes like a mini apple crisp with a hint of caramel flavor from the dates. Mmm… autumn bliss!

- Medjool Dates: Compared to other varieties, medjool dates are larger, softer, and have that naturally sweet, caramel-like flavor that makes them perfect for stuffing. If you have extra dates on hand, try my cookie dough stuffed dates, samoas stuffed dates, or cosmic brownie stuffed dates!
- Apple: You only need one apple for this recipe. I recommend using a crisp variety like Honeycrisp or Pink Lady for the best flavor and texture. Apples are in season right now and incredibly sweet, so I’ve been making my air fryer apples on repeat!
- Maple Syrup: Adds natural sweetness and helps caramelize the apples.
- Cinnamon: A non-negotiable! This warm spice pairs so perfectly with the apples.
- Rolled Oats: I use oats as the base for all my crisp toppings because they add the perfect crunchy texture. You’ll find them in many of my fruit crisp recipes, like my healthy plum crisp, healthy peach crisp, and healthy berry crisp.
- Almond Flour: Adds a soft texture and nutty flavor to the crisp topping.
- Chopped Walnuts & Sliced Almonds: For crunch. I use the same nuts to make my blueberry crisp stuffed dates, but you can substitute for other nuts, such as pecans or peanuts.

How to Make Apple Crisp Stuffed Dates

- Step 1: Add the peeled and diced apples, maple syrup, and cinnamon to a pan over medium heat. Sauté for about 8-10 minutes, until soft and tender. Add a splash of water if needed.

- Step 2: In a small bowl, mix together the oats, almond flour, chopped walnuts, sliced almonds, maple syrup, and vanilla extract until crumbly.

- Step 3: Slice each date lengthwise (without cutting all the way through), remove the pit, and gently open to create space for filling. Fill with the warm sautéed apples.

- Step 4: Add the crisp topping on top. Place the stuffed dates in the air fryer basket and cook at 400°F for 4-5 minutes, or until the topping is golden and crisp. Enjoy warm!
