Theseapple crisp stuffed datesare the easiest fall dessert! Warm cinnamon apples are tucked inside sweet medjool dates, topped with an oat crisp, and air-fried until golden. They taste like a mini apple crisp in every bite!
Sauté the apples: Add the diced apples, maple syrup, and cinnamon to a sauté pan over medium heat. Sauté for about 8-10 minutes, until soft and tender. If the apples are sticking to the pan, add a splash of water.
Make the crisp topping: In a small bowl, mix together the rolled oats, almond flour, chopped walnuts, sliced almonds, maple syrup, and vanilla extract until combined.
Prepare the dates: Slice each date lengthwise (be careful not to cut all the way through), remove the pit, and gently open to create space for filling.
Stuff the dates: Fill each date with the warm sautéed apples, then sprinkle with the crisp topping.
Air fry: Place the stuffed dates in the air fryer basket and cook at 400°F for 4-5 minutes, or until the topping is golden and crisp. Enjoy warm!
Notes
Use medjool dates, which are soft, large, naturally sweet, and caramel-like. Other varieties (such as delget noor) tend to be smaller, less tender, and not as sweet.
I love using Honeycrisp apples in this recipe for their sweetness, but any apple variety will work.
Keep an eye on the air fryer, as they can go from golden to burnt very fast!
No air fryer? Bake in the oven at 350°F for 8–10 minutes instead.
Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, pop them in the air fryer or oven for 3-5 minutes to bring back that crispy topping. Or, enjoy them cold, they’re just as delicious!
