My favorite treat as a kid? Cosmic brownies. I knew it was going to be a good day when I found one in my lunchbox.
These cosmic brownie stuffed dates are my grown-up, better-for-you twist on the classic. Think of them as a date-sized version of the classic: chewy on the outside, fudgy in the middle, covered in chocolate, and finished with rainbow sprinkles (of course). And they’re all yours in just 15 minutes!
If you enjoy stuffed dates as much as I do, you’ll love my snickers stuffed dates, cookie dough stuffed dates, and samoas stuffed dates.

What You’ll Need
This is just a recipe overview! Scroll down to the recipe card to get the full recipe with measurements.
- Medjool Dates: Soft, chewy, naturally sweet, and perfect for stuffing, just like in my samoas stuffed dates and ferrero rocher stuffed dates!
- Almond Flour: Gives the brownie batter its soft, fudgy texture while keeping this recipe gluten-free.
- Cocoa Powder: Provides the rich chocolate flavor that makes the filling taste like a brownie.
- Almond Butter: Helps bind the brownie filling while adding richness. It’s the same trick I use in my no bake brownie recipe.
- Maple Syrup: Adds a little extra sweetness and helps bring the filling together.
- Vanilla Extract: Adds a depth of flavor.
- Vegan Chocolate Chips: For the chocolate coating.
- Sprinkles: What’s a cosmic brownie without the sprinkles? I like using naturally colored sprinkles.
Easy Swaps & Fun Variations
- Almond Butter: Use peanut butter or cashew butter. Just note that peanut butter will add a nuttier flavor.
- Nut-Free Option: Swap the almond butter for sunflower seed butter or tahini and use certified gluten-free oat flour in place of the almond flour.
- Extra Chocolatey: Stir mini chocolate chips into the brownie filling.
- Sweet + Salty: Add a pinch of flaky sea salt on top for a sweet‑salty combo.
How to Make Cosmic Brownie Stuffed Dates

- Step 1: Mix together almond flour, cocoa powder, almond butter, maple syrup, and vanilla extract until a dough forms. Add a spoonful to the center of each pitted date.

- Step 2: Dip each stuffed date in melted chocolate. Add rainbow sprinkles on top before the chocolate sets. Place in the fridge for 5–10 minutes to set, then enjoy!
Megan’s Tips
- Use medjool dates: Medjool dates are soft, large, naturally sweet, and caramel-like, which makes them ideal for stuffing. Smaller or firmer dates won’t give you quite as much room for the brownie filling.
- Add a little coconut oil to the chocolate: Add ½ teaspoon melted coconut oil when melting the chocolate to create a smoother, glossier coating. It also makes the dates easier to dip.
- Add the sprinkles right away. The chocolate sets quickly, so sprinkle each date immediately after dipping.
