I’m so excited to share this recipe because I genuinely eat these Vegan Chocolate Crunch Ice Cream Bars all summer long! This recipe is a twist on my Healthy Fudgesicles which has gone viral several times. I decided to add even more chocolate this time, dipping the non-dairy chocolate ice cream in a chocolate and peanut coating. The peanuts add crunch and flavor – similar to those Magnums we used to eat as a kid.

The chocolate ice cream is made from just 5 simple ingredients: coconut cream, cocoa powder, non-dairy milk maple syrup, and vanilla extract.

The crunchy chocolate shell is made from melted chocolate and crushed peanuts.

It doesn’t get any more simple than that!

Ingredients needed

  • Coconut cream – the thick part from the top of a can of coconut milk. Put the can of coconut milk in the fridge for about 30 minutes to get it thick. I usually just buy a can of coconut cream from Trader Joes. I promise, as someone who does not like coconut, these do not taste like coconut.
  • Non-dairy milk– any non-dairy milk will work.
  • Cocoa powder – use your favorite cocoa powder for the best chocolate flavor.
  • Maple syrup – agave will also work.
  • Vanilla extract
  • Vegan chocolate chips – for the chocolate shell
  • Peanuts – I like to use salted peanuts for the sweet and salty combo.
  • Coconut oil – optional, this will make the chocolate smooth and easier to dip in.

How to make Vegan Chocolate Crunch Ice Cream Bars

Did I mention these ice cream bars are incredibly easy to make?

  1. Add coconut creamnon-dairy milkcocoa powder, maple syrup, vanilla & a pinch of salt to a blender and blend until smooth. Then pour into silicone popsicle molds and freeze.
  2. Melt the chocolate and stir in the chopped peanuts. Dip each popsicle into the chocolate mixture, then onto a parchment lined baking sheet. Freeze until the chocolate has set. Enjoy!

My family and friends always ask me to make these when we’re sitting poolside on a hot summer day – they are the ultimate, indulgent summer treat.

  • Add all of the ice cream ingredients to a blender and blend until smooth.
  • Pour into silicone popsicle molds and freeze for at least 2 hours, until the ice cream is frozen.
  • Add the vegan chocolate chips and coconut oil (if using) to a tall glass and melt in the microwave. Once melted, stir in the crushed peanuts.
  • Prepare a parchment lined tray. Remove the ice cream bars from the molds and dip into the chocolate peanut coating, then place back on the tray. Place in the freezer until the chocolate hardens, then dig in!
