You don’t need an ice cream maker or hard-to-find ingredients to make this classic summer dessert — just a food processor or blender and a little bit of patience. These Vegan Strawberry Shortcake Ice Cream Bars are a sweet, tart and creamy treat.

I’ve always loved strawberry shortcake. The sweet taste, the smell…it’s just so pleasant. Well, these bars are the best of both worlds – they combine the taste and feel of a strawberry shortcake with creamy vanilla ice cream. They are vegan and super easy to make, requiring just 4 ingredients! Plus, they can be made gluten-free too.

One of the best parts about being a kid in the summer is eating ice cream. Strawberry Shortcake Ice Cream Bars are straight from my nostalgic childhood. As a kid during the hot summer months my cousins and I would play at the pool and as soon as we heard the ice cream truck, we ran towards it. Our little eyes were mesmerized by all the different options to choose from — the SpongeBob Squarepants or Strawberry Shortcake Bar were my go-to choices… and I would devour them.

I made these recently on a hot summer day when all our neighbors were outside enjoying the unexpected heat wave in April… needless to say – everybody loved them! A perfect treat for when the weather is hot that everyone will LOVE!

Vegan Strawberry Shortcake Ice Cream Bars Ingredients

• Golden Oreos – I’ve made these two ways: with golden Oreos (which are accidentally vegan), but I have also made a gluten free version using vegan & gluten-free vanilla sandwich cookies that I found at Walmart! I will link them here.

Freeze Dried Strawberries

• Vegan Butter

• Non-Dairy Strawberry Ice Cream – I used Oatly brand.

How To Make Vegan Strawberry Shortcake Ice Cream Bars

I know it might not seem like it, but it’s incredibly easy to make these ice cream bars. Just process the Oreos, freeze dried strawberries and vegan butter in a food processor until a crumb forms. Next, press half of the crumb mixture into a pan, spread the non-dairy strawberry ice cream on top, then top with the remaining crumb mixture. Freeze for an hour or two, and finally slice and dive in. Easy as that!

My intentions when creating this recipe were to offer a healthier version of this nostalgic summer treat. Eating these Strawberry Shortcake Ice Cream Bars takes me back to a time of eating the ice cream truck version. I hope it does for you too!

Vegan Strawberry Shortcake Ice Cream Bars

These Vegan Strawberry Shortcake Ice Cream Bars are a nostalgic and sweet summer treat. Requiring just 4 ingredients - they are so easy to make and a fan favorite, from kids to adults.

Ingredients
 

  • 40 golden Oreos, or use vegan & gf vanilla sandwich cookies
  • 3/4 cup freeze dried strawberries
  • 1/4 cup + 2 tbsp vegan butter, melted
  • 2 pints of non-dairy strawberry ice cream

Instructions
 

  • Remove the ice cream from the freezer to let it melt a little.
  • Line an 8x8 square pan with parchment paper.
  • To a food processor, add the cookies and freeze dried strawberries and pulse a few times.
  • Add the melted butter and pulse until mixture comes together into a crumb.
  • Transfer half of the crumb mixture to the pan (for me this was a little over 2 cups) and press into the bottom of the pan to create the crust. 
  • Add the softened ice cream and spread evenly over the crust. The ice cream should be on the liquid side. If it’s too hard to spread, place the ice cream in the microwave for a few seconds.
  • Add the remaining crumb mixture over ice cream and spread across until the entire top is covered. 
  • Transfer the pan into the freezer and freeze for at least two hours. 
  • Slice into 9 or 12 bars and serve!
