Vegan Chocolate Crunch Ice Cream Bars are made with just 7 simple ingredients featuring a creamy chocolate 'ice cream' encased in a crunchy peanut & chocolate shell.
Add all of the ice cream ingredients to a blender and blend until smooth.
Pour into silicone popsicle molds and freeze for at least 2 hours, until the ice cream is frozen.
Add the vegan chocolate chips and coconut oil (if using) to a tall glass and melt in the microwave. Once melted, stir in the crushed peanuts.
Prepare a parchment lined tray. Remove the ice cream bars from the molds and dip into the chocolate peanut coating, then place back on the tray. Place in the freezer until the chocolate hardens, then dig in!
