Candy apples always looked magical when I was little. I swear they glowed in the case?? But I wasn’t a huge fan, even young Megan knew they were more of a sticky mess than sweet treat.

That’s exactly why I created this caramel apple date bark. It has all the flavors of a candy apple, but in an easy-to-make (and easy-to-eat) bark form.

Picture this: medjool dates pressed into a chewy, caramel-like base, then layered with creamy peanut butter, crunchy pretzels, tart apple pieces, and a drizzle of melted vegan chocolate. Slice, bite, and enjoy!

What’s Date Bark?

Date bark first went viral last year, and considering how much I love dates, I instantly fell in love. It’s a layered, freezer-friendly healthy treat that uses dates pressed into a chewy, caramel-like base. From there, you can layer on nut butters, chocolate, fruit, or crunchy toppings.

  • Medjool Dates: the natural sweetness and caramel-like flavor of dates makes them the perfect base for this recipe.
  • Apple: Green apples add a tart contrast, but any apple works.
  • Pretzels: Crunchy, salty goodness. Use gluten-free pretzels if needed.
  • Peanut Butter: I use peanut butter (because apples and PB are a match made in heaven), but almond butter or even sunflower seed butter works for a nut-free option.
  • Vegan Chocolate Chips: To drizzle on top!

How to Make Caramel Apple Date Bark

  1. Prep the dates: Pit and flatten your medjool dates onto a parchment-lined baking sheet to create the base.
  2. Spread nut butter: Spread a generous layer of nut butter on top of the dates.
  3. Add the crunch: Layer the pretzels in even rows on top of the nut butter, covering the entire surface.
  4. Melt the chocolate: Melt vegan chocolate chips and coconut oil (if using) in the microwave. Spread the melted vegan chocolate over the top and spread to evenly coat the bark.
  5. Add the toppings: Sprinkle diced apples and extra crushed pretzels on top. Finish with a drizzle of extra nut butter and melted vegan chocolate (because why not?)
  6. Freeze & slice: Place the bark in the freezer for 20 minutes to set. Slice into squares and enjoy!

Megan’s Tips

  • Use fresh, soft dates: If your dates are dry, soak them in warm water for 5 minutes before flattening.
  • Serve right away: Fresh apples can brown if stored too long, so this bark is best enjoyed the same day. Or, chop your apples right before sprinkling so they stay crisp and fresh.

Make It Your Own
