Craving candy apples? Try this healthycaramel apple date bark made with dates, nut butter, apples, pretzels and vegan chocolate. All the flavor of candy apples, none of the sticky mess!
Prep the dates: Line a baking sheet with parchment paper. Pit and flatten your medjool dates onto a parchment-lined baking sheet to create a rectangular base.
Spread nut butter: Spread the nut butter on top of the dates.
Add the crunch: Layer the pretzels in even rows on top of the nut butter, covering the entire surface.
Melt the chocolate: Melt vegan chocolate chips and coconut oil (if using) in the microwave. Spread the melted vegan chocolate over the top and spread to evenly coat the bark.
Add the toppings: Sprinkle diced apples and extra crushed pretzels on top. Finish with a drizzle of extra nut butter and melted vegan chocolate (because why not?)
Freeze & slice. Place the bark in the freezer for 20 minutes to set. Slice into squares and enjoy!
Notes
Use fresh, soft dates: If your dates are dry, soak them in warm water for 5 minutes before flattening.
Serve right away: Fresh apples can brown if stored too long, so this bark is best enjoyed the same day. Or, chop your apples right before sprinkling so they stay crisp and fresh.
