It’s finally the season of apple picking, days spent baking and walks through the colorful hues of fall foliage. Who else loves caramel apples? Honestly, I never had one of the *full* caramel covered apples, but I love to dip sliced apples in caramel. The pairing just screams fall and the flavors are immaculate. These apple donuts are a fun twist on the traditional caramel apple, and they’re super easy to make. We’ve been making them for afternoon snacks, my little sister loves having these No Bake Caramel Apple Donuts after school. How fun would these be at a Halloween party or a fall gathering?

Not only are these No Bake Caramel Apple Donuts incredibly delicious, but they’re a healthier alternative to satisfy your sweet tooth for whenever it hits. Fresh, crisp apple slices, topped with a delicious caramel sauce. But wait, here’s the twist! The caramel in these donuts is made from medjool dates, a naturally sweet fruit that adds a delightful caramel-like flavor without the need for refined sugar. Traditional caramel, as you may know, is loaded with sugar!

No Bake Caramel Apple Donuts – Ingredients

• Apples – I use red gala apples since they’re so sweet.

• Medjool Dates – soft, pitted and juicy medjool dates. I always use Joolies Organic Fresh Medjool Dates. The first time I tried them I was genuinely blown away at the freshness and quality of them. Use my code: BOOBOO for money off! If you are using other dates that are hard and dry, add them to a bowl with hot water and soak them for 5-10 minutes until soft and juicy, then drain and pat dry. 

• Non-Dairy Milk – to make the smooth caramel consistency.

• Vanilla Extract – to add a bit of depth to the caramel spread.

• Toasted Coconut Flakes – for topping. It complements the flavors so well!

• Mini Vegan Chocolate Chips – I use Enjoy Life mini chocolate chips.

How To Make No Bake Caramel Apple Donuts

1. Soak the dates in hot water for 10 minutes. Drain.

2. Add the medjool dates, non-dairy milk, vanilla extract and salt to blender and blend until smooth. You may have to stop to scrape down the sides and give it a bit of a mix a few times. 

3. Slice the apples into 1/4-1/2 inch slices and cut a hole out of the center of each apple slice to create a donut shape. Pat the apples slices dry with a paper towel.

4. Spread the date caramel on top, sprinkle with toasted coconut flakes and mini vegan chocolate chips. Enjoy!
