I have always loved parmesan cheese. Especially a nice sprinkle of parmesan on pasta with red sauce. It adds a “je ne sais quoi” element to any dish. This vegan cashew parmesan cheese alternative is so good you won’t miss the real thing. It’s made from cashews (hello healthy fats and nutrients), ready in literally two minutes, and stores well in the fridge. You’ll be sprinkling this vegan cashew parmesan cheese on everything!

How do I make Vegan Cashew Parmesan Cheese?
Simply add the cashews, nutritional yeast, garlic powder and salt to a food processor or blender and process until a crumbly consistency forms. It should be almost powdery like real parmesan but still have some chunks. It should only take about 10 seconds! I recommend pulsing the food processor so you don’t over-process it, otherwise it will just be a powder. We still want a few chunks in it (or, at least I do).

Ingredients
- 1 cup cashews
- ¼ cup nutritional yeast
- ¾ teaspoon salt
- ½ teaspoon garlic powder

- Add all of the ingredients to a food processor or blender and pulse until finely crumbled and slightly powdery.
