- Almond Flour – provides a soft, melt-in-your-mouth texture
- Oat Flour – I make my own oat flour by blending certified gluten-free rolled oats into a flour.
- Peanut Butter – use an all natural runny peanut butter (not the thick, spreadable kind). The only ingredient should be peanuts (and salt).
- Maple Syrup – a natural sweetener that keeps these cookies refined sugar-free.
- Vanilla Extract – for a depth of flavor.
- Baking Soda – helps the cookies rise perfectly.
- Salt – to bring out all the flavors.
- Vegan Peanut Butter Cups – for the snowman’s body and hat! I use Justin’s Dark Chocolate Mini Peanut Butter Cups.
- Vegan White Chocolate Chips – to create the melted snowman effect. I use Enjoy Life white chocolate chips.
- Vegan Mini Chocolate Chips – for the snowman’s eyes. I use Enjoy Life mini chocolate chips.
- Orange Sprinkles – for the snowman’s “carrot” nose.
How To Make Melted Snowman Cookies
- Make the Peanut Butter Cookie Base. In a mixing bowl, combine almond flour, oat flour, peanut butter, maple syrup, vanilla extract, baking soda, and salt. Mix until a dough forms. These cookies bake up soft, chewy, and melt-in-your-mouth delicious
- Assemble the Melted Snowmen. Once the cookies are baked and cooled, cut a peanut butter cup in half. Place the larger bottom half of the peanut butter cup on top of each cookie as the snowman’s “body.” Then, add a dollop of melted white chocolate over the peanut butter cup to create a “melting snow” effect. Add two mini chocolate chips for eyes, an orange sprinkle for the nose, and top with the remaining half of the peanut butter cup as a cute little “hat.”
Tips & Tricks for Perfect Melted Snowman Cookies
- Cool Completely Before Decorating. Let the cookies cool completely before decorating, otherwise the peanut butter cup and white chocolate will melt into the peanut butter cookie.
- Let the White Chocolate Cool Slightly. After melting the white chocolate, let it sit for a few minutes to avoid it running off the cookie.
- Decorating the Snowman. Make sure you add the eyes and nose to the snowman before the white chocolate sets, otherwise it won’t stick. Also, use tweezers to add the eyes and nose for better accuracy!
Frequently Asked Questions
How long do melted snowman cookies last?
Store these cookies in an airtight container at room temperature for 3-5 days, or freeze them for up to two months. I’d recommend freezing the undecorated cookies and add the snowman decorations after thawing. Perfect for getting ahead of the holiday baking game!
Can I make these cookies nut-free?
To make these cookies nut-free, substitute peanut butter with sunflower seed butter, and use a marshmallow as the snowman’s body instead of the peanut butter cups.
What type of peanut butter works best?
Choose a natural, runny peanut butter with only peanuts and salt for the best texture.

Melted Snowman Cookies (Vegan & Gluten-Free)
Ingredients
Peanut Butter Cookies
- 1 cup almond flour
- ¼ cup oat flour
- ½ cup peanut butter, runny
- ⅓ cup maple syrup
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
Snowman decorations
- ⅓ cup vegan white chocolate chips, melted
- 12 mini vegan peanut butter cups, cut in half
- mini vegan chocolate chips
- orange sprinkles, for the snowman's nose
Instructions
Bake the cookies
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, oat flour, peanut butter, maple syrup, vanilla extract, baking soda, and salt. Mix until a dough forms.
- Scoop about 1 tablespoon of the cookie mixture and roll it into a ball. Place the dough balls onto a lined baking sheet and gently press them down to flatten slightly.
- Bake for 10-12 minutes. Remove from the oven (they will seem soft when you take them out but they will firm up as they cool) and let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Decorate the Snowman
- Turn the mini peanut butter cup on its side. Instead of cutting from top to bottom, you’ll be slicing horizontally across the cup’s widest part. Place the larger bottom half on top of each cookie as the snowman’s “body.”
- Add a dollop of melted white chocolate on top of the peanut butter cup to create a “melting snow” effect, using a spoon to gently push the white chocolate to let it flow naturally over the edges.
- Add two mini chocolate chips for eyes, an orange sprinkle for the nose, and top with the other half of the peanut butter cup as a cute little “hat.” Enjoy!
