Make these adorable Melted Snowman Peanut Butter Cookies for a festive holiday treat! Easy, vegan, gluten-free, and kid-friendly, they’re perfect for Christmas!
Preheat the oven to 350ºF and line a baking sheet with parchment paper.
In a mixing bowl, combine almond flour, oat flour, peanut butter, maple syrup, vanilla extract, baking soda, and salt. Mix until a dough forms.
Scoop about 1 tablespoon of the cookie mixture and roll it into a ball. Place the dough balls onto a lined baking sheet and gently press them down to flatten slightly.
Bake for 10-12 minutes. Remove from the oven (they will seem soft when you take them out but they will firm up as they cool) and let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Decorate the Snowman
Turn the mini peanut butter cup on its side. Instead of cutting from top to bottom, you’ll be slicing horizontally across the cup’s widest part. Place the larger bottom half on top of each cookie as the snowman’s “body.”
Add a dollop of melted white chocolate on top of the peanut butter cup to create a “melting snow” effect, using a spoon to gently push the white chocolate to let it flow naturally over the edges.
Add two mini chocolate chips for eyes, an orange sprinkle for the nose, and top with the other half of the peanut butter cup as a cute little “hat.” Enjoy!
