These Healthy Chocolate Turtles have everything you love about traditional turtle candy: crunchy pecans, rich chocolate, and a soft, chewy center. Why I Use Dates Instead of Caramel
As someone who’s created countless date-based desserts, I’ve found that medjool dates are one of the best natural substitutes for caramel (just like in my homemade date caramel).
Unlike traditional caramel, dates require no cooking, no candy thermometer, and no added sugar. They create that same soft, chewy texture we all love, while even sneaking in a little fiber and nutrients!

- Peanut Butter: Helps the pecans stick to the dates while adding a creamy, nutty flavor. While I typically recommend using a drippy peanut butter in recipes like my Vegan Peanut Butter Eggs, a thicker peanut butter works best here so it stays neatly in place. If your peanut butter is runny, stick in the refrigerator to firm up.

How to Make Vegan Chocolate Turtles

- Step 1: Slice each date in half and remove the pits. Lightly flatten the date halves onto a parchment-lined baking sheet.

- Step 2: Spread 1 teaspoon of peanut butter onto each date. Arrange 4 pecan pieces around each date to create the turtle’s “legs.” Transfer the baking sheet to the freezer for 10 to 15 minutes, or until the peanut butter has firmed up.

- Step 3: Spoon about 1 teaspoon of melted chocolate over each date, leaving portions of the pecans visible around the edges. Place a pecan half on top of each turtle to create the “head.”

- Step 4: Return the tray to the freezer for about 5 minutes, or until the chocolate is set. Sprinkle with flaky sea salt, if desired, and enjoy!

- Refrigerated peanut butter works best because it holds its shape and won’t slide off the dates.
- For easy dipping and less mess, chill the turtles before adding the melted chocolate.
