Easy Veggie Noodles

These Easy Veggie Noddles are full of fresh flavors such as ginger, bok choy, peppers and shiitake mushrooms. As you can imagine, the ingredients for this come together very nicely. The fresh ginger is an absolute must for this recipe as it gives it an authentic flavor that you simply can’t get any other way! You’ll taste all the vibrant flavors with each bite — so get ready to eat your veggies!
With farmer’s market season coming to an end, I’ve been loading up on vegetables. This past weekend at the market I picked up some beautiful fresh bok choy and shiitake mushrooms — the stars of our show! With these ingredients at the base, I built off it, adding some other fresh flavors for a wholesome dish.
Ingredients – Easy Veggie Noodles
• Brown Rice Noodles – I buy these vegan, gluten free and low-sodium noodles to keep this dish allergen-friendly. Better yet, these noodles only take 5 minutes to cook!
• Garlic
• Onion
• Shiitake Mushrooms – any mushroom should work in this recipe, but I like shiitake best.
• Red Bell Pepper
• Bok Choy
• Ginger Root
• (Coconut) Liquid Aminos – a much healthier alternative to soy sauce or tamari.
• Maple Syrup
• Lime
This recipe is quick and easy to prepare — taking about 30 minutes from start to finish. To make this dish, start by cooking the noodles per package instructions. Better yet, the noodles only take 5 minutes to cook! While the noodles are cooking, heat the garlic, onions, mushrooms, red bell pepper, bok choy and ginger in a large frying pan or wok. Then, add the cooked noodles, liquid aminos, maple syrup, lime juice and seasonings. Heat through and serve!

Easy Veggie Noddles

Ingredients
- 8 oz brown rice pad thai noodles
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- ¼ cup white onion, diced
- 5 cups shiitake mushrooms, sliced
- 1 red bell pepper, diced
- 1 large bunch of bok choy, or two small bok choy, chopped into 1 inch pieces
- 1 tablespoon ginger, grated
- 3 tablespoons coconut aminos
- 1 tablespoon maple syrup
- 1 lime, juiced
- salt, pepper, sesame seeds, to taste
Instructions
- Cook the noodles per package instructions. Set aside.
- In a wok or large frying pan, heat the olive oil. Add the garlic, onions, mushrooms and red bell pepper. Sauté for 8-10 minutes, until the mushrooms are cooked.
- Add the bok choy and ginger to the pan and sauté for another 5-7 minutes.
- Add the cooked noodles, coconut aminos, maple syrup, lime juice, salt, pepper and sesame seeds. Mix until all the ingredients are well combined and heated through, about 3-5 minutes.
- Garnish with sesame seeds. Serve.
Notes
- Store leftovers in the fridge for 3-5 days and reheat in the microwave or on the stove.
