Prepare the peaches: Cut each peach in half and remove the pit.
Make the filling: In a small bowl, mix together the softened vegan butter, coconut sugar, and cinnamon until well combined. Add a spoonful of the mixture into the center of each peach half.
Air fry: Place the peach halves cut side up in the air fryer. Cook at 350°F for 10 minutes, or until the peaches are tender and caramelized.
