Prep the dates: Slice each date lengthwise and remove the pit (be careful not to cut all the way through). Line a baking sheet or plate with parchment paper.
Stuff with nut butter: Add a spoonful of nut butter into the center of each date, then press them closed slightly. Place in the freezer until the nut butter hardens, about 20-30 minutes.
Melt the chocolate: Add chocolate chips to a microwave-safe bowl and heat in 30-second intervals, stirring between each, until melted. Optional: add 1 tsp coconut oil to help thin the chocolate for easier dipping.
Coat the dates: Use a fork to dip each date into the melted chocolate, coating it completely, then place onto the prepared baking sheet.
Decorate: Before the chocolate sets, press four pretzel pieces into each side of the date to make the spider legs. Sprinkle cacao nibs on top for texture, then add candy eyes or small white chocolate chips for the eyes. Chill in the fridge for 5-10 minutes, or until the chocolate hardens. Enjoy!

Use fresh medjool dates: Fresh medjool dates work best since they’re naturally gooey and easy to stuff. If your dates feel dry, soak them in warm water for 10 minutes, then pat dry.
