Peanut Butter Banana Bread Oatmeal Cookies are like if banana bread met oatmeal cookies. A perfect grab & go breakfast or snack that’s vegan, gluten free & naturally sweetened.
Add the bananas, medjool dates, peanut butter, non-dairy milk and vanilla extract to a food processor or blender and blend until creamy.
Transfer the blended mixture to a mixing bowl and add in the dry ingredients: oats, almond flour, flaxseed meal, walnuts, chocolate chunks, cinnamon and salt. Mix until combined.
Use a cookie scoop to scoop out 2 tablespoon size balls and place on the baking sheet. Add some more chocolate chunks on top of the cookies for haha’s.
Bake for about 18 minutes. Remove from the oven and sprinkle with flaky sea salt. Enjoy!
