This Healthy Peach Crisp is made with fresh or frozen peaches, a crispy oat-almond topping, and naturally sweetened with maple syrup. Ready in under 45 minutes, it's vegan, gluten free, and packed with juicy summer peaches!
If you're using frozen peach slices, take them out of the freezer and let them thaw. If you're using fresh peaches, peel them (or leave the skin on if you prefer) and slice into thin wedges.
Add the sliced peaches to a 9-inch pie dish (or similar sized baking dish). Toss the peaches in cornstarch until evenly coated.
In a mixing bowl, combine the oats, almond flour, chopped walnuts, sliced almonds, maple syrup, melted vegan butter, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Stir everything together until the mixture is crumbly and well combined.
Sprinkle the crisp topping evenly over the peaches.
Cover the baking dish with tinfoil and bake for about 25 minutes. Then, uncover and bake for another 15-20 minutes, or until the topping is golden brown and the peach filling is bubbly.
Remove from the oven and let it cool slightly. Scoop into bowls and top with a scoop of vegan ice cream or coconut whipped cream. Enjoy!

This recipe will work with fresh or frozen peaches. Use whatever you have!
Adjust the cornstarch based on your peaches. When using frozen peaches, I recommend using 1 tablespoon of cornstarch because they release extra moisture as they bake. If you’re using fresh peaches, 1/2 tablespoon is all you'll need.
Store leftovers in the fridge. Reheat in the microwave or oven at 350F for about 10 minutes.
