This Healthy Berry Crisp is the perfect summer treat made with fresh or frozen fruit and a nutty crisp topping. It's vegan, gluten free, refined sugar free, and ready in 30 minutes!
Preheat oven to 375°F. Let the frozen berries thaw in a strainer for about 10 minutes.
Add the slightly thawed berries (or fresh berries) and cornstarch to an 8-inch baking dish. Mix until the berries are evenly coated with cornstarch.
In a large bowl, add all of the crisp ingredients: oats, chopped walnuts, sliced almonds, almond flour, maple syrup, melted vegan butter, vanilla extract and salt. Mix with a spoon until well combined.
Pour the crisp mixture on top the berries and spread until evenly coated.
Bake for 30 minutes.
Serve topped with a scoop of vegan ice cream, if desired. Enjoy!
This recipe will work with fresh or frozen berries. I typically use frozen berries since they are cheaper, have preserved nutrients, and make the crisp extra juicy, but fresh berries are great for using when in season.
Store leftovers in the fridge and reheat in the microwave or in the oven at 350F for about 10 minutes.
