These Chocolate Avocado Truffles are rich, creamy, and packed with healthy fats from avocado. A simple yet indulgent vegan dessert made with just 5 ingredients!
Add the chocolate chips and coconut oil (if using) to a microwave-safe bowl and melt in 30-second intervals, stirring in between, until fully melted (you can also use a double boiler method to melt the chocolate if preferred).
Add the avocado, melted chocolate, maple syrup, vanilla extract, and a pinch of sea salt to a food processor. Pulse until smooth and creamy. You may need to stop and scrape down the sides.
Transfer the mixture to a bowl and refrigerate for 1 hour, or freeze for 10-15 minutes, until the mixture is firm enough to roll into balls.
Scoop out 1 tablespoon of the mixture and use your hands to roll it into a ball. Coat in desired toppings (such as cocoa powder, crushed pistachios, and freeze-dried strawberry powder) and enjoy!

Use avocados that are just starting to ripen for the best flavor and texture. Overripe avocados will have a stronger flavor.
Don’t rush the blending process! Let it blend for at least a minute or more so the mixture becomes smooth and creamy.
After blending, taste and adjust as needed. If you prefer more sweetness, add extra maple syrup. The flavors will continue to develop as time goes by!
