Add the ingredients to a blender: Add the ripe avocados, non-dairy milk, cocoa powder, maple syrup, vanilla extract and salt to a high-speed blender or food processor.
Blend until smooth and creamy: Blend until the pudding is completely smooth and creamy. You may need to pause and scrape down the sides a few times to make sure everything is fully incorporated, but don’t rush this step! The longer you blend, the creamier the texture becomes.
Serve and enjoy: Top the pudding with your favorite toppings, such as fresh berries, crushed nuts, or a dollop of non-dairy whipped cream. Enjoy!
Notes
Use ripe avocados. Avocados that are underripe may not blend smoothly, while overripe avocados with brown spots can sometimes have a stronger flavor. Look for avocados that are slightly soft when pressed, but still bright green inside.
Use a high-quality cocoa powder. Since this recipe only uses a few ingredients, each one really matters! I make this recipe with Trader Joe's cocoa powder.
Blend longer than you think. Keep blending until the pudding is completely smooth, with no avocado pieces remaining (you may need to stop and scrape down the sides).
Taste and adjust. If you feel like you can taste the avocado, add more cocoa powder or vanilla extract. If it's bitter, add more maple syrup. If it's too thick, add more non-dairy milk.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
