Add avocados, cocoa powder, non-dairy milk, maple syrup, vanilla extract and salt to a high-speed blender or food processor. Blend until smooth and creamy, stopping as needed to scrape down the sides. Taste and adjust for flavor (adding more maple syrup, cocoa powder, vanilla, or more non-dairy milk to thin)
Spoon the chocolate pudding into small glass jars or a bowl and refrigerate until ready to serve.
Serve chilled with coconut whipped cream, raspberries and chocolate shavings, if desired.
