Peach crisp for one? Yes, please! This Single Serve Peach Crisp is the easiest way to turn one ripe summer peach into a warm, cozy dessert. Vegan, gluten-free, naturally sweetened, and perfectly portioned for one!
Slice the peach: Peel the peach (or leave the skin on if you prefer), slice into thin wedges, and add it to a small ramekin. For extra sweetness, toss the peach slices in 1 tsp of maple syrup or coconut sugar.
Make the topping: In a small bowl, mix together the oats, almond flour, chopped walnuts, maple syrup, vanilla extract, cinnamon, and salt. Evenly sprinkle the crisp topping over the peaches.
Bake: Cover the ramekin with tinfoil and bake for 20 minutes. Then, uncover and bake for another 10–15 minutes, or until the topping is golden brown and the peach filling is bubbly.
Serve: Let cool for a few minutes before serving. Enjoy warm with a scoop of vegan vanilla ice cream.

Notes
Use a ripe peach. Fresh, in-season peaches makes all the difference! The riper they are, the sweeter and more flavorful your crisp will be.
No fresh peaches? Thawed frozen peach slices work great too!
