This vegan pumpkin baked oatmeal is a cozy fall breakfast that tastes like pumpkin pie! Made with rolled oats, pumpkin purée, maple syrup, and warm pumpkin pie spices, it bakes up soft and tender with golden, slightly caramelized edges. It's naturally sweetened and easy to make ahead for busy mornings.
Preheat the oven. Preheat your oven to 350°F and lightly grease an 8x8-inch square baking dish.
Mix the ingredients: In a large bowl, whisk together the pumpkin puree, non-dairy milk, maple syrup, and vanilla until combined. Stir in the oats, pumpkin pie spice, cinnamon, baking powder, and salt.
Transfer to the dish: Pour the mixture into the prepared dish. If using, sprinkle chopped pecans on top.
Bake: Bake for 35-40 minutes. The center should be just about set, and the top should be lightly golden.
Cool slightly, then serve: Let the baked oatmeal cool in the pan for 5–10 minutes before slicing. Serve warm with your favorite toppings and enjoy! Store leftovers in the refrigerator for up to 5 days.
