Make creamy homemade pistachio butter with just one ingredient in about 15 minutes! All you need is pistachios and a food processor or high-speed blender. Once you see how easy it is to make pistachio butter at home, you'll never go back to store-bought again!
Spread the pistachios on a baking sheet and roast for 8 minutes.
Transfer the roasted pistachios to a food processor (or high-speed blender).
Blend for about 5-10 minutes, scraping down the sides every so often, until smooth and creamy. It will go from crumbly → doughy → creamy. Trust the process!
Once creamy, feel free to add any flavor additions (like maple syrup, sea salt, vanilla extract, or cinnamon). If it forms into a ball again after adding these, don’t worry—it’s normal. Just keep blending until smooth and spreadable. Patience is key.
Pour into small glass jars and enjoy!

Roast the pistachios: It helps warm the pistachios and release their natural oils.
Be patient: The pistachios will go from crumbly → thick → clumpy → smooth. Just keep blending, it can take up to 10 minutes depending on your food processor
Scrape down the sides: Stop and scrape down the food processor as needed to keep the almonds blending evenly.
Machine matters:A food processor is my preferred method, but a high-speed blender also works.
Oil-free: You don't need oil to make this recipe. If your machine is struggling, add 1 teaspoon neutral oil at a time as needed.
Optional flavors: Add sea salt, vanilla, cinnamon, or maple syrup once the pistachios are creamy. It may clump again, but keep blending. It will turn smooth and creamy again.
Storage: Store in a glass jar at room temperature for up to 1 week, or in the refrigerator for up to 1 month.
