A chocolate lovers dream, these chocolate truffles are vegan, gluten free, refined sugar free, and made with just 5 ingredients. Rich, decadent, no-bake and ready in under 25 minutes!
Place the dates in a bowl with hot water and let them soak for 5-10 minutes. Drain the dates and remove the pits.
Transfer the soaked and pitted dates to a food processor along with the cocoa powder, coconut oil, vanilla extract and salt. Process until the mixture forms into a ball, about 1-2 minutes.
Scoop and roll into small balls (about 1 tbsp size). Place the balls onto a parchment lined baking sheet and freeze for at least 15 minutes.
While the truffles are in the freezer, make the chocolate coating by adding the vegan chocolate chips and coconut oil to a microwave-safe bowl and place in the microwave for 30-second increments until the chocolate is completely melted and silky.
Remove the truffles from the freezer and using a fork, dip each truffle into the chocolate, using the fork to turn and coat all sides. Then, scoop it out and place the chocolate coated truffle back onto the parchment-lined tray. Repeat until are all completed coated.
Let the truffles sit until the chocolate has hardened, or place them in the refrigerator to speed up the process. Enjoy!
