These frozen snickers banana pops are a healthier twist on a classic Snickers bar! Made with bananas, peanut butter, peanuts, and dark chocolate, this easy no-bake dessert is vegan, gluten-free, and the perfect sweet-and-salty frozen treat.
Prepare the bananas: Peel the bananas and slice each one in half. Insert a popsicle stick into the cut end of each half, then place them on a parchment-lined baking sheet.
Add the peanut butter & peanuts: Spread a layer of peanut butter on each banana, then press peanuts into the peanut butter. I found that pressing them on by hand is much less messy than rolling.
Freeze: Freeze for about 30 minutes, or until the peanut butter is firm. This extra step makes dipping so much easier and helps keep the peanut butter and peanuts perfectly in place!
Melt the chocolate: Melt the chocolate in the microwave, stirring every 30 seconds, until smooth.
Dip in melted chocolate: Dip each frozen banana pop in the melted chocolate until fully coated, letting any excess chocolate drip off.
Freeze again: Place them back on the parchment-lined baking sheet and freeze for another 10 minutes, or until the chocolate has hardened. Enjoy right away, or transfer them to an airtight container and freeze for later!
Notes
Use firm, ripe bananas. The ideal banana is yellow with no (or just a few) brown spots. Overly ripe bananas will be too soft to spread with peanut butter and can make it harder to assemble.
Freeze before dipping in chocolate. This helps keep the peanut butter and peanuts in place and makes dipping much easier.
Add coconut oil to the chocolate. Stir ½ teaspoon into the melted chocolate for a smoother coating that's easier to dip.
Let them thaw slightly before enjoying. About 10 minutes in the fridge will give the banana a creamier, almost ice-cream-like texture.
Store in the freezer. They'll keep in an airtight container for up to 2 weeks.
